Pizza Chips Keto

These keto pizza chips are the essence of pizza…without the carbs. When you bake cheese, it gets really, really crispy— like a chip. So when topped with a slice or two of pepperoni…Tada! Cheesy Pizza Chips! Easy ingredients, special snack. It’s the same idea as my parmesan crisps.

Makes 12 servings

Ingredients

6 oz pre-shredded Mozzarella

Dried oregano to taste

24 slices pepperoni

Parmesan cheese optional

Directions

  1. This recipe uses a muffin top pan, if you do not have one, just lay the circles of mozzarella on a rimmed baking sheet lined with parchment paper.
  2. Pre heat the oven to 375 degrees.
  3. Lightly spray pan with cooking spray.
  4. Divide the mozzarella between the 12 cups.
  5. Bake for 3 minutes.
  6. Remove from oven and sprinkle with oregano.
  7. Place 2 slices of pepperoni on each circle of cheese
  8. Return to oven and bake for another 5 (7)
  9. Remove and let cool for a minute or two before transferring to a paper towel lined plate. They will harden as they cool.
  10. Serve with marinara sauce or ranch dressing.

Notes:

Use pre-shredded mozz. 

Do not reach for the fancy stuff! Save that beautiful, fresh ball of mozzarella for something else.  Use shredded, bagged cheese. Be sure to choose one marked “low moisture” for a cohesive (not watery!) crust.   I used Sargento whole milk low moisture mozzarella.  When I made this the first time according to the recipe it was too watery.
