Bang Bang Shrimp
AKA Boom Boom, Firecracker or Lava Shrimp
Two different ways, Fried and Baked
bang Bang Shrimp Sauce: Simple, Fast and Very Good
Ingredients
- ½ cup mayonnaise
- 2 tablespoons sweet Thai chili sauce
- 1 tablespoon (or more) Siracha or hot sauce of your choice
- 1 tsp soy sauce Optional
- ½ tsp honey Optional
- Juice of 1 lime Optional
- Chopped chives, or parsley, or cilantro as a garnish
- Refrigerate any left-over sauce for up to a week
Directions
- Mix all ingredients in a bowl. Whisk until combined. Drizzle over shrimp
- Use as a dip or a dressing even on chicken or pork.
Notes
- I prefer the sauce with the first three ingredients only garnished with chives
- Experiment with the optional ingredients if you choose
- Double and you will have plenty to use as a dip etc. or dressing
Shrimp:
Ingredients
- 1 lb. medium shrimp, peeled and deveined
- 3 large eggs beaten (you may add Buttermilk to the eggs)
- For frying:
3 cups of cornstarch or 1½ cups cornstarch and 1½ cups flour (my preference) - Salt and pepper
- Vegetable oil if frying
- For baking:
1 cup cornstarch if baking - 2 cups of Panko breadcrumbs if baking
- 2 tablespoons olive oil if baking
Frying: Preferred Method
Directions
- Heat about 2 inches of the oil in a Dutch Oven to 350 degrees (medium heat)
- Pat the shrimp dry with paper towels
- Season the cornstarch and or flour mixture with salt and pepper
- Working in batches, dredge the shrimp in the cornstarch mixture, shaking off any excess, dip in the beaten eggs then return to the cornstarch mixture, turning to form a thick crust. Set aside until all shrimp are coated
- Fry the shrimp until lightly golden, 2 to 4 minutes
- Transfer with slotted spoon or spider to paper-towel lined plate or rack
- Place shrimp in a serving bowl and drizzle the sauce over the shrimp
- Top with garnish
Baking: Healthy Alternative and Less Messy
Directions
- Pre heat oven to 400 degrees and line a large baking sheet with parchment paper
- Pat the shrimp dry with paper towels
- In a shallow bowl, stir together breadcrumbs, oil, and season with salt and pepper
- In another shallow bowl, whisk eggs
- Put cornstarch in a third bowl
- Dip the shrimp first in cornstarch, then egg, then Panko mixture and transfer to prepared baking sheet
- Continue until all shrimp are coated
- Lightly coat shrimp with cooking spray
- Bake until shrimp are crispy and golden, 10 to 12 minutes
- Place shrimp in a serving bowl and drizzle the sauce over the shrimp
- Drizzle sauce over shrimp
- Top with garnish
